Cherry-red with an ochre rim. In the nose fresh heart-cherry, mildly spicy, complex bouquet. Satiny and sweet on the palate with an extensive and together elegant structure, long finish and excellent potential for ageing, heart cherry in the back.
Vinification:
Harvest by hand, single berry selection on the sorting table (by hand), cool maceration, natural fermentation in big open wooden fermenter, pigeage, ageing in Pièces from Burgundy (12 months, 30% new oak), bottled unstrained
