Deep ruby garnet with a thin transparent rim. Wild cherries, sweet roasted aromas, caramel and floral components comprise multi-layered aromas and flavors. This complex wine has a structure of great finesse combining sweet fruit, integrated acidity and a perfectly integrated spine of tannin. Violets and cherries linger long on the finish. Exceptional potential for further development in the bottle.
Vinification:
Cool maceration for 4 days (at 8°C), fermentation in open wooden-fermenter at 30°C, pigeage twice a day, ageing for 12 month in French burgundy oak (40% new), bottled unfiltered
